Double chocolate oatmeal cookies

Ingredients:-

  1. All purpose flour – 1 cup
  2. Unsweetened cocoa powder – 1/3 cup
  3. Baking soda – 1/2 tsp.
  4. Salt – 1/4 tsp.
  5. Butter – 75 grams, softened
  6. Brown sugar – 3/4 cup, packed
  7. Caster sugar – 1/4 cup
  8. Egg – 1 number, medium
  9. Vanilla essence – 3/4 tsp.
  10. Quick cooking oats – 1/2 cup
  11. Semi-sweet chocolate chips – 1/2 cup
  12. Dessicated coconut powder – 1/4 cup

Method:-

  1. Preheat the oven to 180C.
  2. Sift together the plain flour, salt & baking soda. Set aside.
  3. Beat together the butter, brown sugar & caster sugar till creamy & light. Beat in the egg & essence.
  4. Fold in the sifted flour mixture first.
  5. Add the oats, chocolate chips & coconut powder. Fold in.
  6. Shape level icecream scoopful of the cookie dough  into balls & flatten them slightly.
  7. Place them on a baking tray lined with foil.
  8. Bake at 180C for 15-17 minutes.
