Idichakka thoran/ Tender jackfruit and coconut stir fry

Ingredients:-

  1. Tender jackfruit –  1 medium, about 3.5 cups, cut into bite size cubes
  2. Turmeric powder – 1/2 tsp. + 1/4 tsp., divided
  3. Salt – to taste
  4. Coconut oil – 1 tsp. + 2 tbsps.
  5. Mustard seeds – 1/2 tsp.
  6. Dry red chillies, split – 2 numbers
  7. Curryleaves – a few
  8. Shallots/ kunjulli– 1/4 cup, pounded
  9. Onion – 3/4 cup, finely chopped
  10. Garlic – 2 big cloves, finely chopped + 1 big garlic clove
  11. Grated coconut – 3/4 – 1 cup
  12. Red chilly powder – 1/2 tsp.

Method:-

  1. Cook the jackfruit cubes in your pressure cooker adding 1 tsp. of salt, 1/2 tsp. of turmeric powder, 1 tsp. of coconut oil and 1 cup of water for 2 whistles on high heat. Switch off heat & open the cooker once the pressures completely subside. Cook till all the water has evaporated from the jackfruit cubes. Let cool down. Pound using a mortar and pestle.
  2. Pound together the grated coconut, 1/4 tsp. of turmeric powder, 1/2 tsp of red chilly powder & 1 big garlic clove.
  3. Heat 2 tbsps of coconut oil in a pan & add the mustard seeds. Allow them to pop. Add the dry red chillies & curryleaves.
  4. Stir in the minced garlic, pounded shallots & the onions. Saute’ till they turn golden brown in colour.
  5. Add the pounded coconut mixture & cook on low heat for 2-3 minutes or till dry.
  6. Add the pounded jackfruit pieces & mix well. Check for salt & add more if needed.
  7. Cover cook on low heat for 2-3 minutes more.
  8. Finally open the lid & fry for a minute on high heat or till completely dry.
