Apple Streusel Cake

Ingredients:-

For the cake batter

  1. All purpose flour – 3/4 c
  2. Baking powder – 1/2 tbsp.
  3. Salt – a pinch
  4. Butter ( at room temp.) – 100 g
  5. Caster sugar – 1/2 c
  6. Egg –1, large
  7. Vanilla essence – 1 tsp

For the apple topping:-

  1. Apples, peeled, cored & thinly sliced – 1 large or 2 small
  2. Cinnamon powder – 1/2 tbsp
  3. Clove powder – 1/8 tsp.
  4. Grated nutmeg – 1/8 tsp.
  5. Walnuts – 1/4 cup, coarsely chopped

For the streusel topping:-

  1. Plain flour – 1/2 cup
  2. Butter – 30 grams, chilled
  3. Brown sugar – 1/3 cup

Method:-

  1. Preheat the oven to 180C.
  2. Prepare a 2 lb. loaf tin & keep it aside.
  3. In a medium mixing bowl, pour the sliced apples. Add the cinnamon powder, clove powder & grated nutmeg & toss to combine. keep aside.
  4. Combine the ingredients for the streusel topping. The mixture should resemble coarse bread crumbs. Refrigerate till you get the cake batter ready.
  5. Sift together the plain flour, baking powder and salt.
  6. Beat the butter for 3 minutes with a hand mixer till creamy. Add the caster sugar in 2 additions and beat well after each addition. Beat well for a good 10 minutes.
  7. Beat in the egg and vanilla essence.
  8. Fold in the sifted flour mixture. Pour the batter into the prepared cake tin.
  9. Spread the sliced apples over the cake batter. Sprinkle the chopped walnuts over the apples.
  10. Finally spread the streusel topping evenly over the apple-nut layer.
  11. Bake the cake at 180C for 35-40 minutes.
  12. Serve warm with cream or ice cream.
