Soy chunks – Potato masala fry

Ingredients:-

  1. Soy chunks – 1 cup
  2. Red chilly powder – 1 tsp. + 1/2 tsp., divided
  3. salt to taste
  4. Potato – 1 cup, cubed
  5. Oil – 3 tbsps.
  6. Onion – 2 cups, finely chopped
  7. Curryleaves –  a few
  8. Greenchilly – 1 number, slit
  9. Garlic – 4 numbers, chopped
  10. Coriander powder – 2 tsps.
  11. Turmeric powder – 1/2 tsp.
  12. Pepper powder – 1/2 tsp.
  13. Tomato – 3/4 cup, fnely chopped
  14. Garam masala powder – 3/4 tsp.

Method:-

  1. Soak the soy chunks  in salted hot water for 20 minutes. Squeeze the water well from the soya chunks. Transfer them to a pressure cooker & add 1 cup of water, 11/4 tsp of salt & 1 tsp of red chilly powder. Cook on high heat for 2 whistles & open the cooker once the pressures completely subside. Transfer the cooked soy nuggets to cold water & squeeze them really well to remove all the water.
  2. Cook the potato cubes in 1/2 cup of water adding 1/2 tsp. of salt. Keep aside.
  3. To a pan, add oil & stir in the onions, garlic, curryleaves & greenchilly. Cook till golden brown in clour.
  4. Add red chilly, turmeric & coriander powders & cook on low heat for 2 minutes.
  5. Add the chopped tomato & cook till mushy for 15 minutes.
  6. Add the soy chunks, garam masala powder & pepper powder & fry for 10 minutes.
  7. Add the cooked potato & cook further for 5 minutes.
