Coffee flavoured prune and walnut cake

Ingredients:-

  1. All purpose flour – 1.25 c
  2. Baking soda –1/2 tsp.
  3. Baking powder –1 tsp.
  4. Cinnamon powder – 1/2 tsp.
  5. Salt – a pinch
  6. Butter ( at room temp.) – 100 grams
  7. Caster sugar – 3/4 cup
  8. Egg –2 numbers, small
  9. Vanilla essence – 1 tsp.
  10. Lemon rind – 1/2 tsp.
  11. Instant coffee powder – 1 tsp. mixed with 1 tbsp. of hot water
  12. Buttermilk – 1/3 cup
  13. Prunes – 1/2 cup, finely chopped & mixed with 1 tbsp. of plain flour
  14. Walnuts – 1/2 cup, toasted and coarsely chopped

Method:-

  1. Preheat the oven to 180C.
  2. Prepare a 9×9″ cake tin & keep it aside.
  3. Sift together the plain flour, baking soda, baking powder, powdered cinnamon and salt.
  4. Beat the butter for 5 minutes with a hand mixer till creamy. Add the caster sugar in 3 additions & beat well till the mixture turns white and creamy.
  5. Beat in the eggs, one by one and the vanilla essence.
  6. Beat in the lemon rind and the coffee decotion.
  7. Fold in the sifted flour mixture alternated with the buttermilk.
  8. Fold in the chopped prunes.
  9. Pour the batter into the prepared cake tin.
  10. Sprinkle the chopped walnuts over the cake batter.
  11. Bake the cake at 180C for 35 minutes or till a skewer inserted into the center of the cake comes out clean.
