Tomato Egg masala

Ingredients:-

  1. Eggs – 5 numbers, harboiled and slit
  2. Coconut oil – 3 tbsps.
  3. Curry leaf – 1 sprig
  4. Onion – 3 numbers, medium
  5. Garlic – 5 big cloves
  6. Ginger – 1/2″ piece
  7. Coriander powder – 1 heaping tsp.
  8. Turmeric powder – 1/4 tsp.
  9. Kashmiri chilly powder – 1.25 tsp.
  10. Cumin powder – 1 tsp.
  11. Uluva/Methi powder – a pinch
  12. Tomato – 1.5 cups, pureed in the mixer
  13. Garam masala powder – 1 tsp.
  14. Water – 1 cup
  15. Cornflour – 1 heaping tsp.
  16. Salt as needed

Method:-

  1. Make slits on the eggs and keep them aside.
  2. Heat 3 tbsps. of coconut oil.
  3. Add 1 sprig of curry leaf.Now add the thinly sliced onions, the juliened ginger and chopped garlic. Saute’ till the onion turns golden brown in colour.
  4. Add all the masala powders except garam masala powder and stir fry for 2 minutes.
  5. Add the tomato puree and fry for 15 minutes.
  6. Add the garam masala powder and mix.
  7. Mix the cornflour with water & add it to the masala mixture. Bring to a boil & add the eggs. Cook for 2 minutes or till thick.
  8. Serve hot with roti/paratha/porotta.
