Ghee cake




  1. Plain flour – 1.75 cups
  2. Baking powder – 1 tsp.
  3. Baking soda – 1/4 tsp.
  4. Salt – 1/4 tsp.
  5. Ghee – 1 cup
  6. Powdered sugar -1 cup
  7. Eggs – 4 numbers, yolk and whites seperated
  8. Vanilla essence -1 tsp.
  9. Lemon juice – 2 tsps.
  10. Lemon zest – 1/2 tsp.
  11. Warm milk – 1/2 cup
  12. Granulated sugar – 2 tbsps.


  1. Preheat the oven to 180C.
  2. Sift together the flour, baking powder, baking soda and salt.
  3. Beat together the ghee and powdered sugar till creamy and pale in colour.
  4. Beat in the 4 egg yolks and vanilla essence.
  5. Add the lemon juice & zest. Mix.
  6. Fold in the sifted dry ingredients alternated with milk.
  7. Beat the 4 egg whites till you get soft peaks. Add the granulated sugar little by little & beat till stiff peaks are formed.
  8. Fold in 1/3rd of the beaten egg whites into the cake batter to lighten the cake batter.
  9. Fold in the remaining whites into the cake batter gently but thorougly.
  10. Pour the cake batter into a prepared cake tin (I had used a 9×9″ cake tin).
  11. Bake at 180C for 30 minutes & at 160C for 15 minutes or till a skewer inserted into the center of the cake comes out clean.
