Paneer and Mushroom Friedrice

Ingredients:-

  1. Basmathi Rice – 1.5 cups
  2. Oil- as needed
  3. Water – 3 cups
  4. Salt and pepper powder – to taste
  5. Sliced mushrooms – 2 cups
  6. Paneer – 1 cup
  7. Fine french beans – 1/2 cup, finely chopped
  8. Cabbage – 11/2 cup
  9. Carrot – 1/2 cup, julienned
  10. Green Capsicum – 1/4 cup
  11. Celery – 3 tbsp (finely chopped)
  12. Spring onion ( white part ) – 2 tbsp
  13. Spring onion ( green part) – 1/4 cup
  14. Egg – 1 no.
  15. Soy sauce – 1 tbsp + 1 tsp., divided
  16. Chilly Garlic sauce – 3/4 tbsp.
  17. Tomato ketchup – 1/2 tbsp

Method:-

  1. Soak basmathi rice for 30 minutes and drain. Heat 1 tbsp of oil and saute the rice till opaque. Boil 3 cups of stock.Pour the boiling stock into the rice and add 1.5 tsp. salt and bring to a second boil. Cover cook on low heat for 10 minutes. Keep covered for another 10 minutes. LET COMPLETELY COOL /REFRIGERATE THE COOKED RICE.
  2. Marinate the paneer cubes with 1 tsp of soy sauce, 1/2 tsp of pepper powder & a pinch of salt for 10 minutes. Shallow fry till brown in colour. Keep aside.
  3. Heat 1 tsp of oil & fry the mushrooms adding salt & pepper powder till dry. Keep aside.
  4. Heat the oil and saute the fine french beans  for 2 minutes till soft but crunchy. Reserve.
  5. Saute the shredded cabbage, carrot, celery, capsicum and spring onion ( white part) for 1 minute till crispy and a bit soft.Keep aside.
  6. Beat the egg. Add 1 pinch salt and little pepper powder and prepare scrambled eggs. Keep aside.
  7. Add 1 tbsp. of soy sauce, chilly garlic sauce and tomato ketchup to the cooked rice & mix well. Add all the sauted items, cooked chinese mushrooms and the fried paneer cubes. Add pepper powder and mix well to incorporate.
  8. Add the green part of scallions and mix well.
  9. Add 1 tbsp. of oil & fry the rice for 2 minutes.
  10. Serve hot.
