Easy Scrambled Egg Curry

This egg curry goes very well with Puttu.

Ingredients:-

  1. Eggs – 2 numbers
  2. Coconut oil – 2 tbsps.
  3. Curry leaf – 1 sprig
  4. Onion – 1 cup, finely chopped
  5. Greenchilly -1 number, finely chopped
  6. Coriander powder – 1 heaping tsp.
  7. Turmeric powder – 1/4 tsp.
  8. Pepper powder – 1/4 tsp.
  9. Red Chilly powder – 3/4 tsp.
  10. Tomato – slightly less than 1 cup, finely chopped
  11. Coconut milk powder – 3 heaping tbsps.
  12. Water – 1.5 cups
  13. Garam masala powder – 3/4 tsp
  14. Salt as needed

Method:-

  1. Heat 2 tbsps. coconut oil.
  2. Add 1 sprig curry leaf.Now add the finely chopped onion and the slit greenchilly. Saute till the onion turns golden brown in colour.
  3. Add all the masala powders except garam masala powder and stir fry for 2 minutes.
  4. Add the chopped tomato and fry till oil seperates.
  5. Beat the 2 eggs adding 2 pinches of salt & add to the pan. Mix well till almost dry.
  6. Mix the coconut milk powder with water to make coconut milk.
  7. Add the coconut milk and bring to a boil. Cook till the gravy thickens sufficiently for 1-2 minutes . Finally add the garam masala powder and mix.
  8. Serve hot with puttu.
