Eggless Banana Rava cake (Another method)

Ingredients:-

  1. Rava – 11/2 cups
  2. Ghee – 1 tsp + 2 tbsps (melted)
  3. Milk – 1 cup ( I used full fat)
  4. Banana – 3 numbers, medium, mashed well with a fork
  5. Saffron – a generous pinch
  6. Salt – a pinch
  7. Sugar – 3/4 – 1 cup
  8. Powdered cardamom – 3/4 tsp
  9. Baking soda – 1/2 tsp
  10. Baking powder – 1/2 tsp.
  11. Chopped almonds – 2 tbsps.

Method:-

  1. Roast the rava in 1 tsp of ghee till you get a very nice aroma.
  2. Preheat the oven to 180C. Line a cake tin with parchment paper & grease it. I used a 2 lb. loaf tin.
  3. Mix together sugar, salt, powdered cardamom, milk, saffron strands, 2 tbsps. of ghee (melted) & the mashed banana well.
  4. Sift in the baking powder & baking soda.
  5. Fold in the roasted semolina & chopped nuts.
  6. Transfer the batter to the prepared cake tin.
  7. Bake at 180C for 35 minutes.
  8. Serve warm with tea/coffee.
