Crunchy Oat Milk cookies

Ingredients:-

  1. All purpose flour – 1 cup
  2. Baking soda – 1/2 tsp.
  3. Baking powder – 1/2 tsp.
  4. Salt – 1/4 tsp.
  5. Butter – 100 grams, softened
  6. Brown sugar – 1/2 cup, packed
  7. Caster sugar – 1/2 cup
  8. Egg – 1 number, medium
  9. Vanilla essence – 1 tsp.
  10. Quick cooking oats – 1.25 cup
  11. Semi-sweet mini chocolate chips – 1/2 cup
  12. Grated milk chocolate ( I used Dairy Milk) – 1/2 cup

Method:-

  1. Pulse the oats in a food processor till it resembles wheat bran.
  2. Sift together the plain flour, salt, baking powder & baking soda. Set aside.
  3. Beat together the butter, brown sugar & caster sugar till creamy & light. Beat in the egg & essence.
  4. Fold in the sifted flour mixture first.
  5. Add the oats, chocolate chips & grated chocolate. Fold in. Refrigerate the dough for 2 hours.
  6. Preheat the oven to 180C.
  7. Shape level icecream scoopful of the cookie dough  into balls & place them on a baking sheet lined with foil .
  8. Flatten the cookies with a fork.
  9. Bake at 180C for 17 minutes.
  10. Let cool completely. These cookies are really crunchy.
