Paneer Mutter Pulao

Ingredients :-

For the rice:-

  1. Basmathi Rice – 1.5 cups
  2. Ghee – 1 tbsp.
  3. Cilantro – 1/4 cup, finely chopped
  4. Mint leaves – 2 tbsps, finely chopped
  5. Boiling water – 3 cups
  6. Salt – to taste or around 1.5 tsps.

For the paneer mutter mixture:-

  1. Ghee – 1 tbsp.
  2. Oil – 1 tsp.
  3. Onion – 1.5 cups, thinly sliced
  4. Greenchilly – 1 big, slit
  5. Garlic – 4 numbers, (pasted)
  6. Ginger paste – 1 tsp.
  7. Turmeric powder – 1/4 tsp.
  8. Kashmiri chilly powder – 1/2 tsp.
  9. Coriander powder – 1 heaping tsp.
  10. Cumin powder – 1/2 tsp.
  11. Green peas –3/4 cup(frozen)
  12. Capsicum – 1/4 cup, chopped
  13. Tomato – 1 cup, chopped
  14. Paneer cubes- 200 grams/ 1 cup, lightly fried
  15. Water – 2 tbsps.
  16. Garam masala powder – 1 tsp.

Method:-

Let’s make the rice first.

  1. Soak the rice in water for 30 minutes. Drain out all the water from the rice & keep the it aside.
  2. Heat the ghee and oil in a broad non-stick pan.
  3. Add the rice, cilantro and mint leaves and fry on medium high heat for 3-4 minutes.
  4. Pour the boiling water + salt & cover cook on medium low heat for 10 minutes.

Let’s prepare the vegetable masala next:-

  1. Heat ghee  and stir in the sliced onions and greenchilly. Cook till the onions turn golden brown in colour.
  2. Add the ginger garlic paste and cook for 7 minutes.
  3. Add the turmeric powder, coriander powder, cumin powder, chilly powder and cook for a minute on low heat.
  4. Add the chopped tomatoes and cook till they turn completely mushy.
  5. Add the capsicum and peas. Fry for 3 minutes on medium heat adding 1/3 tsp. of salt.
  6. Add the fried paneer pieces and mix well with the masala.
  7. Cover cook on low heat for 5 minutes adding 2 tbsps. of water.
  8. Finally add the garam masala powder & switch off heat.

Let’s prepare the pulao :-

  1. Mix together the rice & the panner mutter masala.
  2. Serve this pulao hot with raitha and pappad.
