Aloo Mutter Masala

Ingredients:-

  1. Sunflower oil – 2 tbsps.
  2. Cumin seeds – 1/2 tsp.
  3. Onion – 1 number, medium (thinly sliced)
  4. Garlic – 2 big cloves
  5. Turmeric powder – 1/4 tsp.
  6. Kashmiri chilly powder – 3/4 tsp.
  7. Cumin powder – 1/4 tsp.
  8. Tomato – 3/4 cup, chopped
  9. Potato – 2 numbers, medium ( cut into small bite size cubes)
  10. Frozen peas – 1/2 cup
  11. Chopped cilantro – 1/4 cup
  12. Garam masala powder – 1/2 tsp. + 1/4 tsp. ; divided
  13. Water – 1/2 cup
  14. Salt as needed

Method:-

  1. Heat oil in a broad non-stick pan and add the cumin seeds. Allow them to pop up.
  2. Stir in the thinly sliced onions and chopped garlic. Saute’ till the onion turns golden brown in colour.
  3. Add all the masala powders except garam masala powder and stir fry for 2 minutes on low heat.
  4. Add the tomato and fry for 15 minutes or till mushy.
  5. Add the potato cubes, peas, enough salt & fry for 5 minutes.
  6. Add cilantro, 1/2 tsp. of  garam masala powder, water and mix. Cover cook on low heat for 15-20 minutes. Check for salt and add more if needed.
  7.  Switch off heat and add 1/4 tsp. of garam masala powder.
  8. Serve hot with roti/paratha/porotta.
