Microwave Almond Brownies (With Cake like texture)



  1. All purpose flour – 1 tsp.
  2. Baking powder – 1 tsp.
  3. Salt – 1/4 tsp.
  4. Butter – 90 grams
  5. Dark chocolate (atleast 70% cocoa) – 100 grams
  6. Caster sugar – 1 cup
  7. Eggs – 2 numbers, large
  8. Vanilla essence – 1 tsp.
  9. Coarsely ground almonds – 1/2 cup
  10. Instant coffee powder – 1/4 tsp. dissolved in 1/4 cup of warm water


  1. Sift together the plain flour, baking powder & salt. Keep aside.
  2. Melt the dark chocolate and butter together in a microwave. Mix well till smooth. Let this mixture cool down for 5 minutes.
  3. Beat in the caster sugar.
  4. Add the 2 eggs & beat. Stir in the vanilla essence.
  5. Fold in the sifted flour mixture alternated with coffee. Fold in the almonds.
  6. Transfer the brownie batter to a microproof dish.
  7. Cook on high power for 4 minutes. (Please do not overcook. These will turn hard & dry). If properly cooked these brownies would be soft and moist.
  8. Allow to cool down completely.
  9. Cut into squares.
