Fried Idli Masala

Ingredients:-

  1. Left over idlis – 7 numbers
  2. Sunflower oil – 2 tbsps. + as needed for deep- frying
  3. Onion – 4 numbers, medium; finely chopped
  4. Greenchilly – 1 to 2 numbers, slit
  5. Curryleaves – a few, torn
  6. Garlic – 5 big cloves (pasted)
  7. Ginger paste – 1 tsp.
  8. Coriander powder – 1 heaping tsp.
  9. Turmeric powder – 1/4 tsp.
  10. Kashmiri chilly powder – 1 tsp.
  11. Cumin powder – 1/4 tsp.
  12. Tomato – 2 numbers, medium (pureed in the mixer)
  13. Green peas – 1/4 cup (frozen)
  14. Yellow capsicum – 1 small, finely chopped
  15. Cilantro – 2 tbsps., chopped
  16. Garam masala powder – 1 tsp.
  17. Water / Coconut milk– 1/2 cup
  18. Salt as needed

Method:-

  1. Cut the idli into small pieces & deep fry in hot oil over medium heat till golden brown in colour. Drain on paper towel & keep aside.
  2. Heat oil in a broad non-stick pan and add the onions, curryleaves, slit greenchillies and saute’ till the onion turns golden brown in colour.
  3. Stir in the ginger garlic paste and fry for 7 minutes.
  4. Add all the masala powders except garam masala powder and stir fry for 2 minutes on low heat.
  5. Add the tomato puree and fry for 10 minutes or till the oil starts to seperate.
  6. Add the garam masala powder, 2 tbsps. of cilantro and mix.
  7. Add the peas and capsicum & cook for 5 minutes more.
  8. Add water, enough salt & mix.
  9. Finally stir in the fried idli pieces & mix well till all the idli pieces are well coated with the tomato-onion masala.
  10. Serve hot with onion raitha.
