Naadan potato and cauliflower masala curry

Ingredients:-

  1. Coconut oil – 1.5 tbsps.
  2. Mustard seeds – 3/4 tsp.
  3. Onion – 1 cup, thinly sliced
  4. Curry leaves – a few
  5. Greenchilly – 1 number, slit
  6. Water – 2 cups
  7. Potato – 1.25 cup ( cut into small cubes)
  8. Cauliflower florets – 2 cups
  9. Cilantro – 1/4 cup, chopped
  10. Sugar – a pinch
  11. Salt – as needed

For the masala paste:-

  1. Coconut oil – 1.5 tbsps.
  2. Fennel seeds – 1 heaping tsp.
  3. Onion – 1/4 cup, finely chopped
  4. Garlic – 4 big cloves
  5. Ginger – 1 heaping tsp.
  6. Shallots – 5 numbers, thinly sliced
  7. Curry leaves – a few
  8. Coriander powder – 2 heaping tbsps.
  9. Turmeric powder – 1/4 tsp.
  10. Red chilly powder – 1/2 tsp.
  11. Cumin powder – 1/2 tsp.
  12. Tomato –  slightly less than 1 cup, chopped
  13. Cilantro – 1 tbsp., chopped
  14. Grated coconut – 1 cup
  15. Garam masala powder – 1/2 tsp.
  16. Salt as needed

Method:-

  1. For the masala paste, heat oil in a broad non-stick pan and add the fennel seeds. Allow them to splutter. Stir in the chopped onions, shallots, curry leaves, the julienned ginger and chopped garlic. Cook till the onion turns golden brown in colour. Add all the masala powders except garam masala powder and stir fry for 2 minutes on low heat. Add the tomato, grated coconut, chopped cilantro, 2 tbsps. of water and mix well. Cover cook on medium low heat for 20 minutes. Add the garam masala powder and mix.Grind this mixture to a very smooth paste adding little water.
  2. To prepare the curry, heat oil in a pan & add mustard seeds. Allow them to pop up. Stir in the sliced onions, slit greenchilly and curry leaves. Cook till onion turns golden brown in colour. Add the ground masala paste, 2 cups of water, salt and bring this mixture to a boil. Add the potato cubes & cover cook on low heat for 8 minutes.
  3. Stir in the cauliflower florets, chopped cilantro and cover cook for 15 more minutes. I like to keep the florets slightly crunchy.
  4. Add the sugar & mix.
  5. Serve this curry hot with roti/paratha/porotta.
