Layered crunchy oats and chocolate squares

Ingredients:-

For the base layer:-

  1. Old fashioned rolled oats – 1 cup
  2. Brown sugar – 3/4 cup + 2 tbsps.; packed
  3. Salt – a pinch
  4. Plain flour – 1/2 cup
  5. Baking soda – 1/4 tsp.
  6. Melted butter – 80 grams
  7. Cashews – 1/2 cup; coarsely chopped

For the chocolate layer:-

  1. Butter – 100 grams
  2. Cocoa powder – 2 level tbsps.
  3. Milk – 1/4 cup
  4. Powdered sugar – 1 cup
  5. Egg – 1 medium, lightly beaten
  6. Vanilla essence – 1 tsp.
  7. salt – a pinch
  8. Baking soda – 1/4 tsp.
  9. Plain flour – 1/2 cup + 2 level tbsps.

Method:-

  1. Preheat the oven to 190C.
  2. Mix together all the ingredients for the base layer & press down the mixture very well on to the base of a 9″ square tin. Bake at 190C for 12 minutes. Let this base cool down to room temperature.
  3. For the chocolate layer, melt the butter along with cocoa powder in a medium sauce pan. Add milk & switch off heat. Let this cool down for 10 minutes. Beat in the egg, vanilla essence & powdered sugar. Add the plain flour, salt and baking soda and gently fold in. Pour this batter over the previously prepared base layer. Bake further at 190C for 22 minutes.
  4. Let this cool down completely to room temperature. Cut into bars or squares.
