Lentil Rice

Ingredients:-

  1. Basmathi rice – 1 cup
  2. Whole masoor dal (with brown skin) – 3/4 cup
  3. Extra virgin olive oil – 3 tbsps.
  4. Onion -3/4 cup, thinly sliced
  5. Cinnamon – 1″ piece
  6. Cumin seeds – 1/2 tsp.
  7. Garlic paste – 1 tsp.
  8. Onion – 1 cup, finely chopped
  9. Cumin powder – 1/4 tsp.
  10. Cayenne pepper – 1/4 tsp.
  11. Pepper powder – 1/4 tsp.
  12. Boiling water – 2.5 cups
  13. Salt – 1.5 tsp. or to taste
  14. Lemon juice – 1 tsp.

Method:-

  1. Soak the masoor dal in water for 2 hours. Drain out all the water from the dal.
  2. Soak the rice in water for 30 minutes. Drain water from the rice.
  3. Heat 3 tbsps. of olive oil in a broad non-stick pan & add the thinly sliced onions. Fry till golden brown in colour. Remove the fried onions from the oil & keep them aside on paper towel.
  4. To the same oil, add cinnamon & cumin seeds. Stir in the garlic paste and finely chopped onions. Fry till onions turn golden brown in colour.
  5. Add the cumin, cayenne and pepper powders. Cook for a minute on low heat.
  6. Add the rice & fry for 2-3 minutes on medium high heat. Add the drained lentil, 2.5 cups of boiling water & salt.
  7. Cover & cook on low heat for 20 minutes.
  8. Add the caramelised onions & lime juice & remove from heat.
  9. Serve hot with curd/labneh.
