Spicy macaroni (Indian style)

Ingredients:-

  1. Macaroni – 1 cup
  2. Salt to taste
  3. Olive oil – 3 tbsps.
  4. Onion- 1/2 cup, finely chopped
  5. Garlic – 3 big cloves, minced
  6. Kashmiri chilly powder – 1/2 tsp.
  7. Cumin powder – 1/4 tsp.
  8. Tomato – 1 medium; finely chopped
  9. Button mushroom – 1.5 cups, thinly sliced
  10. Tomato ketchup – 1 tbsp.
  11. Coloured capsicum – 1/2 cup
  12. Celery – 2 tbsps.
  13. Spring onion – 3 tbsps., chopped
  14. Grated cheddar cheese – 1/3 cup
  15. Pepper powder – 1/2 tsp.
  16. Oregano – 1/2 tsp.
  17. Dried basil – 1/4 tsp.
  18. Chopped cilanttro – 2 tbsps.

Method:-

  1. Cook the pasta in salted water till it is soft (more than al Dante’). Drain out all the water from the cooked pasta & keep the pasta aside.
  2. Heat olive oil in a broad non-stick pan & add the garlic & the chopped onions. Cook till the onions turn golden brown in colour.
  3. Add red chilly and cumin powders and cook for a minute on low heat.
  4. Stir in the chopped tomato & cook for 15 minutes or till mushy.
  5. Add the button muhrooms, oregano, basil and enough salt. Cook till the mushrooms turn soft & are completely dry.
  6. Throw in the chopped capsicum & cook for 2 minutes on medium high heat.
  7. Finally add the chopped celery, spring onion, tomato ketchup, grated cheese, cooked pasta & pepper powder. Cook for a minute more & remove from heat.
  8. Garnish with chopped cilantro & serve hot.
