Saucy tomato rice

Ingredients:-

  1. Basmathi rice – 2 cups
  2. Salt as needed
  3. Olive oil – 2 tbsps.
  4. Onion – 1 cup, finely chopped
  5. Garlic – 3 big cloves, minced
  6. Celery – 2 tbsps., finely chopped
  7. Red bell pepper – 0.5 cup
  8. Kashmiri chilly powder – 1/2 heaping tsp.
  9. Paprika powder – 1/2 tsp.
  10. Pepper powder – 1/4 tsp.
  11. Tomatoes – 3 medium, pureed in the mixer
  12. Tomato sauce/ketchup – 1.5-2 tbsps.
  13. Cilantro – 1/4 cup, finely chopped
  14. Boiling water – 4 cups

Method:-

  1. Soak the basmathi rice in water for 30 minutes. Drain all the water from the rice & keep aside.
  2. Heat olive oil & add the garlic, chopped onions, red bell pepper & celery. Cook till the onion turns pink.
  3. Add chilly, paprika & pepper powders & cook for a minute on low heat.
  4. Stir in the tomato puree & cook till the oil seperates.
  5. Add the ketchup & mix.
  6. Stir in the rice, cilantro & fry for 3-4 minutes on high heat.
  7. Add boiling water & salt & bring to a second boil.
  8. Cover cook on low heat for 10 minutes.
  9. Serve hot with grilled chicken.
