Ingredients:-
- Basmathi rice – 2 cups
- Salt as needed
- Olive oil – 2 tbsps.
- Onion – 1 cup, finely chopped
- Garlic – 3 big cloves, minced
- Celery – 2 tbsps., finely chopped
- Red bell pepper – 0.5 cup
- Kashmiri chilly powder – 1/2 heaping tsp.
- Paprika powder – 1/2 tsp.
- Pepper powder – 1/4 tsp.
- Tomatoes – 3 medium, pureed in the mixer
- Tomato sauce/ketchup – 1.5-2 tbsps.
- Cilantro – 1/4 cup, finely chopped
- Boiling water – 4 cups
Method:-
- Soak the basmathi rice in water for 30 minutes. Drain all the water from the rice & keep aside.
- Heat olive oil & add the garlic, chopped onions, red bell pepper & celery. Cook till the onion turns pink.
- Add chilly, paprika & pepper powders & cook for a minute on low heat.
- Stir in the tomato puree & cook till the oil seperates.
- Add the ketchup & mix.
- Stir in the rice, cilantro & fry for 3-4 minutes on high heat.
- Add boiling water & salt & bring to a second boil.
- Cover cook on low heat for 10 minutes.
- Serve hot with grilled chicken.
