Soy chunks and paneer cutlet

Ingredients:-

  1. Soy chunks – 1 cup
  2. Paneer – 200 grams
  3. Red chilly powder – 1 tsp.
  4. Potato –2 medium, boiled, cooled, peeled & mashed
  5. Sunflower oil– 1 tbsp+ as needed to deep fry
  6. Curryleaves – 2 tbsps, minced
  7. Onion – 1 cup, finely chopped
  8. Greenchillies – 3 to 4 numbers, very finely chopped
  9. Garlic – 4 big cloves, chopped
  10. Ginger – 1 tsp. , minced
  11. Pepper powder – 1 tsp.+ 1/4 tsp.; divided
  12. Cilantro – 1/2 cup, chopped
  13. Chaat masala powder – 3/4 tsp.
  14. salt as needed
  15. Bread  crumbs – 1 cup
  16. Cornflakes (processed in the food processor to get corn crumbs)- 1 cup
  17. Egg – 1 medium, beaten lightly
  18. Maida – 1/2 cup

Method:-

  1. Soak the soy chunks in hot salted water for 30 minutes. Drain the water & squeeze the soy chunks well. Marinate with the red chilly powder & 1/2 tsp. of salt for 15 minutes. Deep fry in hot oil till golden brown in colour. Drain on paper towels. Process the fried soy chunks coarsely using food processor.
  2. Deep fry the paneer cubes & crumble the fried paneer.
  3. Heat 1 tbsp of oil in a pan & stir in the onions, greenchillies, ginger, garlic & curry leaves. Cook till the onions turn golden brown in colour.
  4. Add 1 tsp. of pepper powder & mix for a minute.
  5. Add the soychunks, paneer, mashed potatoes, cilantro & chaat masala powder. Mix well for 2-3 minutes on medium high heat.
  6. Allow the mixture to cool down to room temperature.
  7. Mix together the bread crumbs & cornflakes.
  8. Add maida, pepper powder & a pinch of salt to the beaten egg & mix.
  9. Make cutlets as usual by shaping the mixture into patties, dipping patties in beaten egg, rolling in bread crumbs-cornflakes mixture & deep frying.
  10. Drain on paper towels.
  11. Serve hot.
