Raspberry coffee cake

Ingredients:-

For the cake batter:-

  1. Plain flour – 2 cups
  2. Baking powder – 1 tsp.
  3. Baking soda – 1 tsp.
  4. Salt – 1/3 tsp.
  5. Butter – 75 grams
  6. Caster sugar – 1 cup
  7. Eggs – 2 numbers, medium
  8. Vanilla essence – 1.5 tsps.
  9. Heavy cream – 1 cup

For the filling:-

  1. Raspberry pie filling – 3/4 cup
  2. Granulated white sugar – 1.5 heaping tbsps.
  3. Icing sugar – 1 heaping tsp.
  4. Cinnamon powder – 1 tsp.

Method:-

  1. Preheat the oven to 180C.
  2. Mix together the cinnamon powder, icing sugar and sugar & keep aside.
  3. Sift together the plain flour, salt, baking soda & baking powder.
  4. Beat together the butter & powdered sugar till creamy and fluffy.
  5. Beat in the 2 eggs, one by one & beat well after each addition.
  6. Beat in the vanilla essence. Fold in the sifted flour mixture alternated with the cream. The batter will be thick.
  7. Pour half of the batter into a prepared tube pan. Spread the raspberry filling on top of the batter. Sprinkle the sugar mixture & carefully spread the remaining cake batter on top.
  8. Bake at 180C for 35-45 minutes.
