Pizza Donuts

Ingredients:-

For the dough:-

  1. All purpose flour – 2 cups/ 200 grams
  2. Salt – 1 tsp.
  3. Egg – 1 number, medium
  4. Oil – 4 tbsps.
  5. Instant yeast – 1.5 tsps. (level)
  6. Sugar – 1.5 heaping tsps.
  7. Lukewarm water – 3/4 cup or as needed

For the filling

  1. Chicken (cooked with salt & pepper and shredded) – 1 cup
  2. Pizza sauce – 2 tbsps.
  3. Green capsicum – 2 tbsps; finely chopped
  4. Sweet corn – 2 tbsps.
  5. Onions – 2 tbsps., finely chopped & sautéed in 1 tsp. of oil till pink
  6. Black olives – 2 tbsps., sliced
  7. Oregano – 1/4 tsp.
  8. Basil – 1/4 tsp.
  9. Cheddar cheese – 3/4 cup; grated
  10. Mozzarella cheese – 1/4 cup; grated

For the final stage:-

  1. Egg – 1 number, beaten
  2. Bread crumbs – as required
  3. Oil – for deep-frying

Method :-

  1. Mix together the plain flour, egg, yeast, sugar, oil, salt and lukewarm water. Knead the dough for a good 15 minutes, also keep banging the dough as you knead. The dough should be slightly sticky. Cover with a damp cloth & keep undisturbed for 1-1.5 hours/ till the dough doubles in volume.
  2. While the dough is resting, prepare the filling. For the filling mix together the shredded chicken,  pizza sauce, oregano, basil, sweetcorn, capsicum, onion, black olives, salt and cheese.
  3. Punch down the risen dough & divide it into 10 equal parts. Take a portion of the dough & roll it into a circle. Take a ball and flatten it to make a circle, place a little of the chicken cheese mixture in the center of the circle & roll the dough back again into a ball. Repeat with the other dough & filling portions.
  4. Dip each ball into beaten egg & roll in bread crumbs.
  5. Heat oil for deep-frying. When the oil becomes really hot, reduce heat to minimum & carefully place the donuts into the hot oil.  Deep fry on medium low heat till golden brown & crisp.
  6. Serve hot.
