Jaggery Ginger cake

Since the combination of jaggery and milk is considered to be toxic please don’t use milk instead of water in this recipe .

Ingredients:-

  1. Plain flour – 1.5 cups
  2. Baking powder– 1/2 tsp.
  3. Baking soda – 1/2 tsp.
  4. Cinnamon powder – 3/4 tsp.
  5. Dry ginger powder – 3/4 tsp.
  6. Salt – 1/4 tsp.
  7. Butter – 100 grams
  8. Brown sugar – 1/3 cup (tightly packed)
  9. Thick jaggery syrup – 1/2 cup
  10. Egg –1 number, big
  11. Grated fresh ginger – 1 tbsp.
  12. Vanilla essence – 3/4 tsp.
  13. Boiling water – 1/2 cup

Method:-

  1. Preheat the oven to 180C.
  2. Sift together the plain flour, salt, baking soda , baking powder, dry ginger powder & cinnamon powder.
  3. Beat together the butter, jaggery syrup & brown sugar till creamy and fluffy.
  4. Beat in the egg.
  5. Beat in the vanilla essence and grated ginger.
  6. Fold in the sifted flour mixture alternated with the boiling water.
  7. Pour the batter into a prepared cake tin ( I had used a 9″ square tin).
  8. Bake at 180C for 35-40 minutes.
