Chunky mango and chocolate chip cake

Ingredients:-

  1. Plain flour – 1.25 cup
  2. Baking powder – 1.5 tsp.
  3. Salt – a pinch
  4. Butter – 190 grams, softened
  5. Castor sugar – 3/4 cup
  6. Eggs – 3 numbers, big
  7. Vanilla essence – 1 tsp.
  8. Mango essence – 1/4 tsp.
  9. Chocolate  chips – 1/4 cup
  10. Walnuts – 1/4 cup; coarsely chopped
  11. Mango – 1 number, medium; cut into bite sized cubes

Method:-

  1. Preheat the oven to 180C.
  2. Sift together the plain flour, salt & baking powder.
  3. Beat the 3 eggs with an electric beater till foamy and pale for about 10 minutes.
  4. Add the castor sugar gradually and beat well.
  5. Beat in the vanilla essence and mango essence.
  6. Add the softened butter & beat.
  7. Fold in the sifted flour mixture, chocolate chips and walnuts.
  8. Pour the batter into a prepared 2 lb.loaf tin.
  9. Fold in the mango cubes.
  10. Bake at 180C for 45 minutes. Let this cake cool down completely to room temperature before serving.
