Moist semolina cookies



For the cookie dough:-

  1. All purpose flour – 1 cup
  2. Semolina/ Coarse rava – 1 heaping tbsp.
  3. Dessicated coconut powder – 1 heaping tbsp.
  4. Baking powder – 1/2 tsp.
  5. Salt – 1/4 tsp.
  6. Butter – 50 grams, softened
  7. Sunflower oil – 2 tbsps.
  8. Caster sugar – 2 heaping tbsps.
  9. Egg – half a large egg
  10. Vanilla essence – 1/2 tsp.

For brushing on top of the cookies:-

  1. Egg – half of a large egg, beaten
  2. Nuts (preferably blanched and halved almonds) – 5 numbers

For the soaking syrup:-

  1. Sugar – 3/4 cup
  2. Water – 3/4 cup
  3. Lime juice – 1 tbsp.


  1. Preheat the oven to 180C.
  2. Sift together the plain flour, salt, baking powder, dessicated coconut & semolina. Set aside.
  3. Beat together the butter, oil & caster sugar till creamy & light. Beat in the egg & essence.
  4. Fold in the sifted flour mixture to get a dough.
  5. Divide the mixture into 10 equal portions and shape each portion into a ball.
  6. Flatten each ball slightly and place them on a cookie tray lined with foil.
  7. Flatten the cookies with a fork and brush them with the beaten egg. Place a nut at the center of each cookie and press lightly.
  8. Bake at 180C for 22-25 minutes/ till golden brown in colour.
  9. While the cookies are baking, prepare the soaking syrup. Combine water, sugar and lime juice ina medium saucepan & heat till the sugar dissolves completely.
  10. Pour the warm syrup over the hot cookies.
  11. Allow the cookies to absorb the syrup completely before serving. I like to have these cookies warm.
