- Really sour dosa batter
- Finely chopped cabbage
- Add enough salt to the dosa batter and mix. The dosa batter should be little bit saltier than usual.
- Heat a tawa till it is really hot. Pour a ladleful of batter on the tawa & press it lightly. Do not spread the batter, Uttappam should be a bit thick. Lower heat and sprinkle about 1/3rd cup of chopped cabbage and press gently. Drizzle ghee on the top and along the sides.Cover cook on low heat for 2 minutes or till the bottom side is golden brown in colour.
- Flip the uttapam & cook the other side as well.
- Serve hot with coconut ginger chutney.
