Spicy chicken, corn and pasta bake

Ingredients:-

For the pasta layer:-

  1. Penne pasta – 1.75 cup
  2. Salt to taste
  3. Water to cook the pasta

For the saucy chicken layer:-

  1. Olive oil – 4 tbsps.
  2. Chicken – 500 grams, boneless breasts (julienned)
  3. Minced garlic – 4 big cloves.
  4. Chilli garlic sauce – 2 tbsps.
  5. Sweet chilli sauce – 1 tbsp.
  6. Tomato ketchup – 1 tbsp.
  7. Soy sauce –  1 tbsp.
  8.  Capsicum – one medium; finely chopped
  9. Sweet corn (boiled) – 1 cup
  10. Salt and pepper to taste

For marinating the chicken:-

  1. Salt – 1.25 tsps.
  2. Pepper powder – 3/4 tsp.
  3. Chilli garlic sauce – 1 tbsp.
  4. Oregano – 1/2 tsp.
  5. Cornflour – 2 bit heaping tbsps.
  6. Egg – half of a small,; lightly beaten

Other ingredients:-

  1. Onion – 2 numbers; medium; thinly sliced
  2. Salt – a pinch
  3. Oregano – 1/2 tsp.
  4. Oil – 1 tbsp.
  5. Grated cheddar cheese – 1/4 cup

For the white sauce:-

  1. Butter – 30 grams
  2. Plain flour – 3 tbsps.
  3. Chicken stock/water – 1.5 cups
  4. Milk – 1.5 cups
  5. Mustard paste – 1 tsp.
  6. Salt and pepper to taste

For topping:-

  1. Grated cheddar cheese – 1/2 cup
  2. Parmesan cheese – 2 tbsps.; grated
  3. Tomato ketchup – as needed
  4. Butter cubes– 1 tbsp.

Method:-

  1. Cook the pasta in boiling water adding enough salt till al Dante for about 8-10 minutes. Drain all the water from the pasta & keep aside.
  2. Heat 1 tbsp. of oil & fry 2 medium onions till golden brown in colour. Keep aside.
  3. Marinate the chicken pieces with salt, pepper powder, chilli garlic sauce, oregano, egg and cornstarch.
  4. Heat 4 tbsps. of oil in a pan & add the minced garlic. Cook till the garlic is lightly browned.  Add the marinated chicken pieces and fry till done . Add the chilly garlic, soy and sweet chilli sauces and cook further for 3 minutes. Add the chopped capsicum and sweet corn and mix. Remove from heat.
  5. For the white sauce, heat butter in a pan and add the plain flour. Cook for 2 minutes on low heat. Stir in the milk,stock, salt, pepper powder and mustard paste and cook till slightly saucy.Don’t make this sauce too thick. Add grated cheddar cheese & mix. Remove from heat.
  6. Preheat the oven to 180C.
  7. In a greased casserole dish, spread the cooked pasta. Spread the saucy chicken mixture over the pasta.Sprinkle 1/4 cup of cheddar cheese, oregano and caramelised onions. Pour the white sauce over the onion-cheese layer. Finally sprinkle grated cheddar cheese, parmesan cheese & place butter cubes here and there. Dot with tomato ketchup.
  8. Bake in the preheated oven at 180C for 25 minutes.
  9. Serve hot with garlic bread.
