Ginger walnut ring (Eggless and with wheat flour)



  1. Wheat flour – 1 c
  2. Baking powder – 1/2 tsp.
  3. Dried ginger powder -1/4- 1/2 tsp.
  4. Cinnamon powder – 1/2 tsp
  5. Nutmeg powder – a pinch
  6. Fresh ginger – 1 tsp; grated
  7. Salt – a pinch
  8. Butter ( at room temperature) – 100 grams
  9. Brown sugar – 1/4 c
  10. Sweetened condensed milk – 1/4 c
  11. Milk – 1/2 cup
  12. Chopped walnuts – 1/3 cup


  1. Prepare a 5″ diameter ring mould and set it aside.
  2. Preheat the oven to 180C.
  3. Sift together the wheat flour, baking powder, cinnamon powder, dry ginger powder, grated numeg and salt.
  4. Beat the butter and sugar with a hand mixer till creamy. Add the condensed milk and  beat well for a good 10 minutes to get that spongy texture.
  5. Fold in the sifted flour mixture alternated with the milk.
  6. Fold in the walnuts and grated ginger.
  7. Pour the batter into the prepared cake tin.
  8. Bake at 180C for 25-30 minutes or till a skewer inserted into the center of the cake comes out clean.
  9. Serve warm or let cool completely and enjoy with tea/ coffee.
