Easy wheat and cashew tea cake



  1. Wheat flour –1.5 cup
  2. Baking soda – 1/2 tsp.
  3. Baking powder – 2 tsps.
  4. Salt – a pinch
  5. Refined oil – 1 cup
  6. Eggs – 3 numbers, big
  7. Castor sugar – 1 cup
  8. Vanilla essence – 1 tsp.
  9. Thick curd – 1/4 cup
  10. Cashews – 25 grams; halved


  1. Preheat the oven to 180C.
  2. Sift together the wheat flour, salt, baking powder & baking soda.
  3. Beat the 3 eggs adding 1 tbsp. of water till frothy for about 5 minutes. Add the castor sugar little by little & beat well for 7 minutes or till the mixture turns thick and creamy.
  4. Add oil in a steady stream & keep beating the egg mixture as you add the oil into it.
  5. Beat in the vanilla essence.
  6. Fold in the sifted flour mixture alternated with the curd.
  7. Transfer the cake batter to a prepared cake tin.
  8. Place the cashew nut halves on the top.
  9. Bake at 180C for 30-35 minutes.
