Peanut Butter sandwich cookies


Makes 8 cookie sandwiches. There are no leavening agents used.


  1. All purpose flour – 1 cup + 2 tbsps.
  2. Salt – 1/4 tsp.
  3. Butter – 100 grams, softened
  4. Peanut butter – 3 tbsps.
  5. Brown sugar – 1/2 cup
  6. Egg – 1 number; medium
  7. Vanilla essence – 1 tsp.
  8. Oats (quick cooking) – 1/2 cup

For the filling:-

  1. Peanut butter – 1/2 cup
  2. Icing sugar – 3/4 cup
  3. Fine biscuit powder – 1 tbsp.


  1. Sift together the plain flour and salt. Set aside.
  2. Beat together the butter, peanut butter & brown sugar till creamy & light. Beat in the egg & essence.
  3. Fold in the sifted flour mixture first.
  4. Add the oats and fold in. Refrigerate the dough for 1 hour.
  5. Preheat the oven to 180C.
  6. Make lime sized balls from the dough & place them on a baking sheet lined with foil .
  7. Flatten the cookies with a fork.
  8. Bake the cookies at 180C for 15 minutes.
  9. Let cool down completely before making the cookie sandwiches.
  10. For the filling, beat together the peanut butter and icing sugar till creamy and fluffy. Stir in the biscuit crumbs. Use this mixture to make the cookie sandwiches.
