Cucumber Dosa

  1. Pachari/ White Rice – 1 cup
  2. Grated cucumber ( I used Vellarikka) – 1.5 cups
  3. Grated coconut – 1/2 cup
  4. Grated jaggery – 1/4 cup
  5. Powdered cardamom – 1/2 tsp.
  6. Salt – 3/4 tsp.
  7. Ghee – as needed

  1. Soak the white rice for 4 hours. Drain the water completely from the rice & grind it along with grated coconut, jaggery, salt, cardamom powder & grated cucumber to a smooth batter; the batter should be thinner than Dosa batter. You don’t have to add any water at all. Add the grated cucumber little by little while grinding the rice.
  2. Heat a pan & smear it with ghee. Pour a ladleful of batter and spread it slightly like how you do for thattu dosas, don’t make it very thin. Cover cook on low heat for 1-2 minutes. Drizzle ghee along the sides of the dosa. Flip and cook the other side of the dosa. Repeat with the remaining batter to make more dosas.
  3. Serve piping hot.
