Dry fruit slice

Ingredients:-

For the base:-

  1. Butter – 100 grams/ 1/2 cup /4 oz.
  2. Castor sugar – 50 grams/ 1/4 cup/ 2 oz.
  3. All purpose flour – 150 grams/ 1.5 cup / 6 oz.

For the dry fruit filling:-

  1. Tutti-frutti, candied orange peel – 3/4 cup
  2. Black currants – 1/2 cup
  3. Rum – 1 tbsp.
  4. Powdered cinnamon – 1/2 tsp.

For the nutty topping:-

  1. Butter – 100 grams/ 1/2 cup /4 oz.
  2. Castor sugar – 100 grams/ 1/2 cup/ 4 oz.
  3. Eggs – 2 numbers
  4. Vanilla essence – 1 tsp.
  5. Almond meal – 1 cup

Method:-

  1. For the fruit filling, combine the tutti-frutti, candied orange peel,  black currants, rum and powdered cinnamon in a glass bowl and set aside for 7-8 hours.
  2. For the base, beat together the butter and castor sugar till creamy and fluffy. Add the plain flour and mix till the whole mixture comes together in the form of a smooth dough. Press this mixture on to the base of an 8×8″ brownie pan lined with parchment paper. Chill for 30 minutes.
  3. Preheat the oven to 180C.
  4. For the nutty topping, beat together the butter and castor sugar till creamy and fluffy. Add the 2 eggs, one by one and beat well after each addition. Add the vanilla essence and mix. Fold in the almond meal. This mixture would look like a regular cake batter.
  5. Spread the dry fruits mixture over the chilled base and pour the nutty topping mixture over the fruits.
  6. Bake at 180C for 30 minutes.
  7. Let cool completely before cutting into squares.
  8. Serve with a cup of tea/coffee.
