Pineapple Butter cake

Ingredients:-

  1. Plain flour –1.75 cups
  2. Baking powder – 2 tsps.
  3. Salt – a pinch
  4. Butter – 3/4 cup; softened
  5. Powdered sugar – 3/4 cup
  6. Eggs – 3 numbers, medium
  7. Vanilla essence – 1/2 tsp.
  8. Yellow food colour – 1/4 tsp.
  9. Pineapple puree – 1/3 cup (Take 3-4 slices of tinned pineapple and puree it using a mixer/blender)
  10. Lemon zest – 1 tsp.
  11. Milk – 2 to 4 tbsps.
  12. Pineapple slices – as needed ( I used Al Ali pineapple slices in heavy syrup)
  13. Lemon juice – 1 tbsp.
  14. Pineapple jam – 2 tbsps.

Method:-

  1. Preheat the oven to 180C.
  2. Sift together the plain flour, salt & baking powder.
  3. Beat together the softened butter and powdered sugar for 10 minutes with a hand mixer till light and fluffy.
  4. Beat in the three eggs, one by one and beat well after each addition.
  5. Beat in the vanilla essence, food colour, lemon zest and pineapple puree.
  6. Fold in the dry flour mixture alternated with the milk.
  7. Transfer this mixture to a prepared 9×9″ cake tin.
  8. Arrange the pineapple slices over the cake batter. Apply lemon juice over the slices.
  9. Bake at 180C for 30-35 minutes. Spread jam over the hot cake.
