Butterless Orange and Oat crispies


The texture of these cookies aren’t as good as the texture of the cookies made with butter/shortening.


  1. All purpose flour – 1 cup
  2. Baking powder – 1/2 tsp.
  3. Baking soda – 1/4 tsp.
  4. Salt – 1/4 tsp.
  5. Oats – 1.5 cups (Pulsed in the food processor)
  6. Egg – 1 number
  7. Brown sugar – 1/4 cup
  8. Caster sugar – 1/2 cup
  9. Oil – 1/2 cup
  10. Orange zest – 1 tbsp.
  11. Fresh orange juice – 1 tbsp.
  12. Vanilla essence – 1/2 tsp.


  1. Preheat the oven to 180C.
  2. Sift together the plain flour, baking powder, baking soda and salt. Set aside.
  3. Beat the egg with a hand mixer really well. Add the sugars and beat again till pale in colour and thick.
  4. Add the oil gradually and keep beating the mixture.
  5. Stir in the essence, orange zest and juice.
  6. Fold in the sifted flour mixture and oats.
  7. Drop 1 heaping tsp. of the batter on to a cookie tray lined with foil.
  8. Bake the cookies at 180C for 15 minutes.
  9. Let cool completely before serving.
