1. Onions – 4 big/medium; thinly sliced
  2. Curry leaves – a few; chopped
  3. Salt – 1 tsp.
  4. Garam masala powder / Crushed fennel seeds – 1/2 tsp.
  5. Red chilly powder – 3/4 tsp.
  6. All purpose flour – 3/4 cup
  7. Baking soda – 1/4 tsp.
  8. Oil to deep fry the vadas


  1. Add salt to the onions and mix well with hand. Keep the onions aside for 15 minutes. They will let out water.
  2. Add red chilli powder, curry leaves, garam masala powder, maida and baking soda to the onions and mix well.
  3. Heat oil for deep frying the vadas.
  4. Wet your hands and make balls from the mixture and drop carefully into the hot oil.
  5. Fry on medium low heat till brown in colour.
  6. Drain on paper towels and serve hot.
