Chocolate cake with Mousse topping




For the cake batter :-

  1. Plain flour –1.25 cups
  2. Baking powder – 2 tsps.
  3. Salt – a pinch
  4. Unsweetened cocoa powder – 4 heaping tbsps.
  5. Boiling water – 6 tbsps.
  6. Butter – 200 grams; softened
  7. Brown sugar – 1 cup (packed)
  8. Eggs – 4 numbers, large
  9. Vanilla essence – 2 tsps.

For the mousse:-

  1. Dark chocolate – 150 grams
  2. Eggs – 3 numbers; whites and yolks separated
  3. Softened butter – 90 grams
  4. Vanilla essence – 1 tsp.


  1. Preheat the oven to 180C.
  2. Sift together the plain flour, salt & baking powder.
  3. Beat together the softened butter and  sugar for 10 minutes with a hand mixer till light and fluffy.
  4. Beat in the 4 eggs, one by one and beat well after each addition.
  5. Beat in the vanilla essence.
  6. Fold in the dry flour mixture alternated with the milk.
  7. Transfer this mixture to a prepared cake tin.
  8. Bake at 180C for 30-35 minutes. Cool completely before frosting.
  9. For the chocolate mousse, melt the dark chocolate in a double boiler. Allow it to cool completely. Beat in the 3 egg yolks, one by one. Stir in the butter and vanilla essence. Beat well till the mixture is creamy and fluffy. Separately beat the 3 egg whites till they hold peaks. Fold in the beaten egg whites into the chocolate mixture. Refrigerate for 1 hour.
  10. Spread the chocolate mousse over the cake.
