Jam cookies


  1. All purpose flour – 1/2 cup
  2. Fine rice flour – 1/2 cup ( I used Appa podi)
  3. Baking powder – 3/4 tsp.
  4. Powdered sugar – 1/2 cup
  5. Salt – 1/4 tsp.
  6. Butter – 100 grams, softened
  7. Egg yolks – 2 numbers
  8. Vanilla essence – 1/2 tsp.
  9. Mixed fruit/Strawberry jam – as required
  10. Beaten egg white – for brushing on top
  11. Demerara sugar – for sprinkling on top of the cookies


  1. Sift together the plain flour, salt, baking powder & rice flour.
  2. Add powdered sugar to the sifted flour mixture and mix. Add butter and rub into the flour mixture.
  3. Add the 2 egg yolks and mix till you get a soft dough.
  4. Refrigerate the dough for 30 minutes.
  5. Preheat the oven to 180C.
  6. Make small lime size balls from the cookie dough. Take a ball and flatten it, place 1/2 tsp. of jam at the center & roll back into a ball again. Repeat with the other dough balls.
  7. Place the jam filled cookie balls on a baking tray lined with foil. Brush the cookie balls with lightly beaten egg white & sprinkle Demerara sugar on top.
  8. Bake at 180C for 15-20 minutes.
  9. Let cool completely. These cookies are really crunchy.
