Potato and Tomato subji

Ingredients:-

  1. Potato – 2 big/ 500 grams; boiled, peeled and mashed coarsely
  2. Oil – 2 tbsps.
  3. Cumin seeds – 1/2 tsp.
  4. Cloves – 2 numbers
  5. Cardamom – 1 number
  6. Black cardamom – 1 number
  7. Bayleaf – 1 number
  8. Cinnamon – 1′ stick
  9. Onion – 1 cup (chopped and then pureed in the mixer)
  10. Kashmiri chilly powder – 1 level tsp.
  11. Turmeric powder – 1/2 tsp.
  12. Coriander powder – 1 level tsp.
  13. Cumin powder – 1/2 tsp.
  14. Tomato – 250 grams/ 1.25 cups (pureed in the mixer)
  15. Water – 1 cup
  16. Sugar – 1 tsp. (optional)
  17. Lime juice – 1 tbsp.
  18. Kasoori methi – 1/2 tsp.
  19. Garam masala powder – 1/2 tsp.

Method:-

  1. Heat oil and add the cumin seeds, bay leaf, cardamom, cinnamon and cloves. Stir in the onion paste and cook till it turns golden brown in colour. Stir in the chilly, coriander, cumin and turmeric powders and cook for a minute on low heat.
  2. Add the pureed tomato and cook for 10 minutes or till oil separates. Stir in salt and the mashed potato. Fry for 2 minutes till the potato pieces are well coated with the masala. Add lime juice, kasoori methi, sugar and 1 cup of water. Cover cook on medium low heat for 5 minutes.Finally add the garam masala powder.
  3. Serve hot with chapathi/puri.
