Mixed vegetable and mutton mince upma

Ingredients:-

  1. Semolina – 1.5 cups
  2. Coconut oil – 2 tbsps. + 2 tbsps.; divided
  3. Mustard seeds – 1 tsp.
  4. Dry red chillies – 4 numbers; split
  5. Curryleaves – a few
  6. Ginger – 1.5 tbsps.; chopped
  7. Greenchilly – 2 numbers; finely chopped
  8. Onion – 1 cup; finely chopped
  9. Mutton mince – 500 grams
  10. Carrot – 1/2 cup; finely chopped
  11. Potato – 3/4 cup; finely chopped
  12. Frozen peas – 1/2 cup
  13. Beans – 1/2 cup; finely chopped
  14. Turmeric powder – 1/2 tsp.
  15. Kashmiri chilly powder – 1.5 tsp. (level)
  16. Garam masala powder – 1 tsp.
  17. Tomato – 1 cup; chopped
  18. Grated coconut – 1/4 cup
  19. Boiling water – 2.5 cups
  20. Salt to taste or 1.5 tsps.

Method:-

  1. Heat 2 tbsps. of oil in a wok & roast the semolina for 5 minutes. Transfer to a plate and keep it  aside.
  2. To the same wok, add 2 more tbsps. of oil & add the mustard seeds and allow them to splutter. Add the dry red chillies, curry leaves and ginger. Cook till ginger is browned.
  3. Stir in the chopped onions & greenchillies and cook till translucent.
  4. Add the turmeric powder, chilly powder and garam masala powder and fry for a minute on low heat.
  5. Add the minced meat and salt. Fry for 2 minutes on high heat. Cover cook for 15 minutes or till half done. Add the beans, peas, carrot and potato and cover cook for 15 more minutes or till everything is cooked well. Stir in the tomato and cook for 2 minutes or till they turn soft.
  6. Add the grated coconut and the roasted semolina. Mix well.
  7. Boil 2.5 cups of water separately.
  8. Add the boiling water little by little to the semolina mixture and keep stirring while you add the water. This upma should not be mushy but should be in the powder form. Make sure that the semolina is also cooked well.
