Almond Upside down double chocolate cake

Ingredients:-

  1. Plain flour –1.5 cup
  2. Baking soda – 1/4 tsp.
  3. Baking powder – 1.5 tsps.
  4. Salt – a pinch
  5. Unsweetened cocoa powder – 1/3 cup
  6. Butter – 200 grams; softened
  7. Brown sugar – 1.5 cup
  8. Eggs – 4 numbers, large
  9. Vanilla essence – 1 tsp.
  10. Thick curd – 1/4-1/2 cup
  11. Chocolate chips – 2/3 cup

For the topping:-

  1. Toasted almonds – 1.5 cups; coarsely chopped
  2. Butter – 75 grams; softened
  3. Brown sugar – 1/3 cup

Method:-

  1. Preheat the oven to 180C.
  2. Apply 75 grams of butter on the base of a tube pan. Sprinkle brown sugar and then the nuts over the butter.
  3. Sift together the plain flour, salt, cocoa powder, baking soda & baking powder.
  4. Beat together the softened butter and brown sugar for 10 minutes with a hand mixer till light and fluffy.
  5. Beat in the 4 eggs, one by one and beat well after each addition.
  6. Beat in the vanilla essence.
  7. Fold in the dry flour mixture alternated with the curd. Fold in the chocolate chips.
  8. Pour this mixture over the nuts layer.
  9. Bake at 180C for 45 minutes.
