Easy Mutton Stew

Ingredients:-

  1. Mutton pieces with bones – 500 grams
  2. Coconut oil – 2 tbsps.
  3. Cardamom – 2 numbers
  4. Clove – 2 numbers
  5. Peppercorns – 1 tsp.
  6. Bay leaf – 1 number
  7. Cinnamon – 1″ piece
  8. Onion – 2 medium; thinly sliced
  9. Greenchilly – 2 to 3 numbers; slit
  10. Garlic – 5 big cloves; chopped
  11. Ginger – 1 tbsp; chopped
  12. Curry leaves – a few
  13. Potato – 1 medium; cut into big pieces
  14. White vinegar – 1/2 tsp.
  15. Water – 2 cups
  16. Coconut milk powder – 3 heaping tbsps.
  17. Salt to taste

Method:-

  1. Heat coconut oil in a wok and add the whole spices. Stir in the onions, greenchillies, curry leaves, chopped ginger and garlic. Cook till onions turn golden brown in colour.
  2. Transfer the onion mixture to a cooker along with the mutton pieces, vinegar, potato, salt and 2 cups of water. Close the cooker and put the weight on. Simmer for 15 minutes after the first whistle.
  3. Open the cooker once the pressures subside and add the coconut milk powder. Bring the mixture to a rolling boil & cook further for 5 minutes on high heat.
  4. Serve with bread, appam and idiyappam.
