Chilly prawn rice

Ingredients:-

  1. Basmathi rice – 2 cups
  2. Prawns – 500 grams
  3. Salt to taste
  4. Boiling water – 3.5 cups
  5. Chilly oil – 3 tbsps.
  6. Garlic – 1 tbsp; chopped
  7. Whole button red chillies – 4 numbers
  8. Sambal oelek – 1 tbsp.
  9. Light soy sauce – 2 tbsps.
  10. Green chilly sauce – 1 tbsp.
  11. Sriracha chilly sauce – 2 tbsps.
  12. Red chilli flakes – 1 tsp.
  13. pepper powder – 1/2 tsp.
  14. Sugar a pinch
  15. Spring onion greens – 1 cup; chopped
  16. Celery – 1/4 cup; chopped

Method:-

  1. Soak the rice in water for 30 minutes. Drain water from the rice. Add boiling water and salt to rice and cover cook on medium low heat for 5 minutes. Add the prawns and cover cook for 10 minutes more.
  2. In a thick bottomed pan, heat the chilly oil & add the chopped garlic and button red chillies. Cook till the garlic starts to change colour. Stir in the chilly sauces, soy sauce, sambal oelek and cook on low heat for a minute.
  3. Add the cooked rice-prawns mixture, chilly flakes, pepper powder and mix for 2 minutes. Finally add the spring onion greens, sugar and celery and remove from heat.
