Vegetable Samosa


  1. Oil – 1 tbsp.
  2. Mustard seeds – 1/2 tsp.
  3. Curry leaves – 20 numbers; chopped
  4. Ginger and garlic paste – 1 tsp.
  5. Onion – 3/4 cup; finely chopped
  6. Greenchilly – 1 number; very finely chopped
  7. Turmeric powder – 1/2 tsp.
  8. Red chilli flakes – 1/2 tsp.
  9. Salt to taste
  10. Potato – 2 cups; cubed
  11. Carrot – 1 medium; peeled and chopped coarsely
  12. Green peas – 1/2 cup
  13. Sweet corn – 1/2 cup
  14. Garam masala powder – 1/2 tsp.
  15. Lime juice – 1 tbsp.
  16. Samosa leaves – as required
  17. Oil for deep frying


  1. Combine the cubed potato, carrot and peas in a cooker. Add 3/4 cup of water and 1 tsp. of salt and cook for 2 whistles on high heat. Open the cooker once the pressures subside. Cook till the veggies are completely dry.
  2. Heat 1 tbsp. of oil in a broad non-stick pan & add the mustard seeds. Allow them to pop. Stir in the curry leaves followed by the ginger garlic paste. Add the chopped onions and greenchilly & cook till the onions turn pink. Add the turmeric powder and red chilli flakes and cook for a minute on low heat. Stir in the cooked veggies, sweet corn, garam masala powder and mix. Keep mashing the veggies slightly. Finally add the lime juice and remove from heat. This is the filling.
  3. Make samosas as usual. Fry the samosas on a medium low heat to ensure that they are crisp.
