Oatmeal and chocolate bars with flaked coconut



  1. Plain flour – 1.5 cups
  2. Baking powder – 3/4 tsp.
  3. Salt – 1/4 tsp.
  4. Butter – 150 grams; melted and cooled to room temperature
  5. Castor sugar – 1/4 cup
  6. Brown sugar – 1/2 cup (tightly packed)
  7. Egg – 2 numbers
  8. Vanilla essence –  1 tsp.
  9. Whole oats- 1.5 cups
  10. Sweetened coconut flakes – 3/4 cup
  11. Dark chocolate chunks – 1 cup


  1. Preheat the oven to 180C.
  2. Sift together the plain flour, baking powder and salt.
  3. Add brown sugar and caster sugar to the melted butter and beat to combine. Beat in the 2 eggs, one by one and the essence.
  4. Fold in the sifted plain flour mixture, oats, chocolate chunks and the flaked coconut.
  5. Transfer the batter to a prepared 8″ square tin and bake at 180C for 20 minutes.
  6. Let cool completely before cutting into bars.
